Chili

Can you guess what I made today?

Chili

Back when I was single, alone (and happy), I used to make chili. I got sick of eating Kraft dinners all the time so this was my attempt at "real" cooking. I mean I could make breakfast like scrambled eggs and stuff but this was different, exotic - and easy! I don't know what it was, maybe the need to go back to that time period, but I got a craving for it again. If you want to try it it's really simple but be warned that it is spicy so if you don't like that kinda stuff stay away. Personally I LOVE hot foods, bring it on. My favorite hot food is spicy roti but that's a different story. Here we're talking chili and lots of it...

You'll Need:
1lb (500g) ground beef (sorry vegetarians...)
1 can 28oz/796ml diced tomatoes
1 can 14oz/398ml tomato sauce. If you want more spice use spicy red peppers & chilis - zesty italian version of Hunt's sauce).
1 can 19oz/540ml red kidney beans
1 packet 39g of chili seasoning mix - old el paso is good. If you want more spice put in extra chili powder! Ouch! I buy it in bulk.

Preperation:
Put the meat in a pot and cook it well on medium-high heat. Drain the juices. Stir in the diced tomatoes and the tomatoe sauce. Cook on medium for ten-15mins. Keep stirring, don't want it to stick. For added personality I add green onions or garlic, but that's me. Once it all looks like it's done, pour in the beans. Remember to drain the water from the can first. Stir it up to mix the beans in well. That's it, you're done. Pull it off the stove and dig-in. When I serve it, I like to put grated chedder cheese on the top. I like the way it melts and it tastes great.
